His passion for life, for products, for flavours, as well as his skills, have made Chef Mustapha EL HAJRAOUI an obvious choice to orchestrate the change of style in the Maya Jah kitchen.

Enthusiastic, culturally rich with culinary skills acquired and developed alongside famous Michelin starred Chefs from Monaco, Casablanca to Mumbai, this lover of travel has designed a new lighter, healthier and tastier fusion menu, based on Mediterranean and oriental recipes.

Chef EL HAJRAOUI, trained in Monaco, at the "Lycée Technique et Hôtelier de Monte Carlo", began his career under the direction of Chef Franck CERUTTI, who instilled in him the methods and respect for the products, the best way to prepare them and how to enhance them. Taken under the wing of Alain DUCASSE, he perfected his apprenticeship, working in kitchens throughout Europe and Asia.

Appointed Executive Chef of the Mandarin Oriental Hotel in Marrakech, where he managed kitchens from different horizons: Indian, French, Asian and a gastronomic Moroccan restaurant.

He then managed all the kitchens of the Royal Mansour Marrakech, thus acquiring an acute knowledge of the desires of a demanding international clientele.Once returning to Monaco, he became passionate about creating seafood and Mediterranean fish dishes.

In the heart of the Maya Jah, we have created a unique counter for the presentation & preparation of fresh seafood products, a counter where the Chef creates his new lighter, healthy and richly flavoured recipes.

"The traditional Moroccan and Indian cuisine has remained untouched".

It is a personal challenge to create a new menu and provide an explosion of flavours that will transport guests to a new culinary destination.Using my traditional methods as a base and incorporating my knowledge of today's culinary expectations.
